Sticky Honolulu Chicken 🍗

Ingredients

  • 2 teaspoons - Sesame oil
  • 800 grams - Chicken thigh fillets, halved
  • ½ cup (160 grams) - Peach & mango jam
  • ⅓ cup (80 milliliters) - Barbecue sauce
  • ⅓ cup (80 milliliters) - Pineapple juice, sweetened
  • 2 cloves - Garlic, finely chopped
  • 1 - Brown onion, small, halved, thinly sliced
  • 2 tablespoons - Soy sauce
  • 2 - Green shallots, sliced diagonally
  • ½ teaspoon - Sesame seeds
  • White rice, steamed, to serve

Directions

  1. Heat the oil in a large deep frying pan over medium-high heat. Cook the chicken for 4-5 minutes each side or until browned.
  2. Meanwhile, combine the jam, barbecue sauce, pineapple juice, garlic, onion, soy and 1 tsp freshly cracked black pepper in a bowl.
  3. Pour jam mixture over chicken and bring to a simmer. Reduce heat to medium-low. Cook, covered, turning chicken halfway, for 15 minutes. Uncover and cook, basting chicken with jam mixture, for a further 5 minutes or until chicken is cooked through and sauce has thickened.
