Sticky Honolulu Chicken 🍗

Ingredients
- 2 teaspoons - Sesame oil
- 800 grams - Chicken thigh fillets, halved
- ½ cup (160 grams) - Peach & mango jam
- ⅓ cup (80 milliliters) - Barbecue sauce
- ⅓ cup (80 milliliters) - Pineapple juice, sweetened
- 2 cloves - Garlic, finely chopped
- 1 - Brown onion, small, halved, thinly sliced
- 2 tablespoons - Soy sauce
- 2 - Green shallots, sliced diagonally
- ½ teaspoon - Sesame seeds
- White rice, steamed, to serve
Directions
- Heat the oil in a large deep frying pan over medium-high heat. Cook the chicken for 4-5 minutes each side or until browned.
- Meanwhile, combine the jam, barbecue sauce, pineapple juice, garlic, onion, soy and 1 tsp freshly cracked black pepper in a bowl.
- Pour jam mixture over chicken and bring to a simmer. Reduce heat to medium-low. Cook, covered, turning chicken halfway, for 15 minutes. Uncover and cook, basting chicken with jam mixture, for a further 5 minutes or until chicken is cooked through and sauce has thickened.
