Homemade Beef Summer Sausage 🍖
A quick and easy snack for summer! ☀️

Ingredients
- 2 tablespoons - Morton Tender Quick salt
- ½ teaspoon - Garlic powder
- 1 tablespoon - Mustard seeds
- 3 tablespoons - Black pepper, coarse
- 1 tablespoon - liquid smoke
- 1 tablespoon - sugar
- 2 pounds - Ground beef, 80-85% lean
Directions
- Add everything to a large bowl (or stand mixer) and mix really well.
- Divide into 2 portions and shape into logs, about 6–7 inches long.
- Wrap tightly in plastic wrap, optionally double wrap.
- Refrigerate for 24 hours (don’t skip this step).
- Unwrap and place on a sheet pan.
- Bake at 275°F for 2 hours.
- Cool in the fridge, slice, and store.
